INTRODUCING: The Doughmidor, a solid pine dough proofing box with a see through lid. Seals in humidity for ease of watching your dough proof. Wooden dough boxes are the traditional pizza dough proofing method and are still in use by Italian and New Haven pizzerias and bakeries. After several years of making and using wooden dough boxes with a clear plastic lid for my organic pizza doughs and other baked products, I have decided to produce these scaled down, profesional quality proofing boxes for home use.
Wooden Dough Box Advantages: • Produces a slightly drier dough ball base requiring less bench flour • Less bench flour prevents a burnt bitter flour on the base of your pie • Yields a pizza dough that is easier to launch from the peel • Pizzas bake with a crispier base • Higher hydration doughs will be less sticky and handle more like lower hydration dough • All natural eastern white pine, no scraping on plastic • Durable finger joint construction • Multiple boxes will stack tightly • Wood food surfaces, especially pine, are laboratory proven to be naturally anti-mirobial as compared to plastics • Made in USA
